How to make Double Chocolate Easter Cookies

To prepare this cookie recipe, take a large bowl and mix together butter, brown & caster sugar till fluffy and pale. Add vanilla essence and mix it well. In a large bowl, sieve together the flour, baking soda, cocoa powder and salt.

Fold in the flour mixture into the butter-sugar mix till combined. And then add chopped dark chocolate and milk in the bowl. Whisk well all the ingredients and then knead into a dough. Roll the dough into a flat disc and wrap it in a cling wrap. Place it inside the refrigerator for about 20 minutes. After that, divide the chilled dough into small discs of 30 grams each. Gently roll and place in the baking tray covered with parchment paper. Top up the cookies with gems.
Step 3
Place the baking tray in the oven and bake the cookies for about 12 minutes at 180 degrees Celsius. Once baked, remove from the oven and allow the cookies to cool on a wire rack. Serve these delicious Double Chocolate Easter Cookies with milk, coffee or tea and enjoy!
